Potato Skins

These potato skins are so quick and easy! What more can I say? They’re delish! These can be an easy side or appetizer.

The cast:

I bought a block of cheddar cheese so I could shred it in my food processor to get shredded cheese, but you can buy already shredded cheddar cheese if you prefer. I just love the consistency of the cheese when it’s been shredded in the food processor.

Preheat oven to 350 degrees.

Wash potatoes well and score with a knife. Excuse my owl shaped trivets looming under the baking dish. Bake the potatoes in the oven for 60 minutes. Remove from the oven and let cool.

Once potatoes are cooled, cut in half and scoop out inside of potato.

Reserve insides for another use. Leave about 1/4 inch of potato inside.

Spray baking dish with nonstick spray and place potatoes inside. Sprinkle with cheese and bacon bits. Bake in oven for 5-10 minutes, or until cheese is bubbly.

Remove from oven and sprinkle with green onions and sour cream. I sprinkled a little bit of ground pepper on top as well.

Delicious potato skins loaded with green onions and sour cream.

Ingredients

  • 2 medium baking potatoes
  • 1/2 cup shredded cheddar cheese
  • bacon bits
  • 1 green onion, chopped
  • 1/2 cup sour cream

Directions

Preheat oven to 350 degrees.
