Margarita Chicken

I tried this recipe out for the first time over the weekend and it was such a hit! I will definitely be making this again in the near future. The chicken is very juicy and has good flavor from the margarita marinade. Pair this chicken with an actual margarita and yum!

The cast:

img_8274I bought the thinly sliced boneless, skinless chicken breasts because they’re easier to grill on my little kitchen grill I have.

Combine the margarita mix, olive oil, garlic, and cilantro in a small bowl.

Pierce chicken with a fork and place in a large ziploc bag.

Pour all but 2 tbsp of marinade mixture in bag.

Close bag and refrigerate at least 3-4 hours. I let my chicken marinade over night to have the chicken really absorb the marinade. Turn bag occasionally to make sure chicken gets all of the marinade.

Combine remaining 2 tbsp of marinade mixture with honey. Grill chicken, brushing remaining mixture over chicken just before removing from the grill. Serve immediately.

Grilled chicken marinated in a margarita mixture.

Ingredients

  • 6 boneless, skinless chicken breasts
  • 1/4 cup prepared margarita mix
  • 2 tbsp olive oil
  • 1 tbsp fresh cilantro, roughly chopped
  • 1 garlic clove
  • 2 tbsp honey

Directions

Combine margarita mix, olive oil, garlic, and cilantro in a small bowl.
