Enchilada Sauce

My aunt came up with this recipe for homemade enchilada sauce. It’s a good meaty enchilada sauce and makes a ton!

The cast:

IMG_8349I used ground turkey instead of hamburger for this recipe. You could use whatever meat you wanted for the sauce, it will also be used inside the enchiladas.

I also bought a block of sharp cheddar to shred in my food processor. You can also use whatever cheese to your liking.

Heat up some oil in a pot and add the meat and onion to the pot.

Cook until the meat is no longer pink. Drain the grease off.

Stir in flour, garlic, chili, and cumin.

Mix in Wolf Brand chili and add 4 cans of water. Simmer for 40 minutes.

Mix flour and water together and thicken chili mixture. Add more spices to taste, if needed.

Cook tortillas in oil 1 minute on each side and drain on paper towels. Sprinkle tortilla with grated cheese and add chili mixture. Place in casserole dish.

Cover with chili mixture and sprinkle with cheese.

Bake for 20-30 minutes.

Serve warm and enjoy these enchiladas! There’s a ton of sauce leftover, if you’re only making a few enchiladas, that can be refrigerated or frozen for another time.

Enchilada Sauce

  • Servings: 12

A nice, meaty homemade enchilada sauce.

Ingredients

  • 2 lbs hamburger
  • 1 large onion, chopped
  • 4 tsp garlic powder*
  • 4 tsp cumin*
  • 1/3-1/2 cup chili powder*
  • 3 heaping tbsp flour
  • 1 can Wolf Brand chili without beans
  • 4 cans water
  • 1/4 cup flour
  • 2/3 cup water
  • tortillas
  • shredded cheddar cheese

*to taste

Directions

Cook hamburger and onion until meat is no longer pink. Drain grease off.

Stir in 3 tbsp flour, garlic, chili, and cumin. Mix in Wolf brand chili and add 4 cans of water. Simmer for 40 minutes.

Preheat oven to 350 degrees.

Cook tortillas in oil 1 minute on each side and drain on paper towels. Sprinkle tortilla with grated cheese and add chili mixture. Place in casserole dish. Cover with chili mixture and sprinkle with cheese. Bake for 20-30 minutes.
