Fried Rice

I love, love, LOVE fried rice. Shrimp fried rice is my all time favorite, but when I make it at home I just like to have veggies. I like to vary what veggies I put in, but my go to homemade fried rice always has mushrooms and green onions in it. This is a quick recipe to curb that fried rice craving.

Cook rice according to package directions.

While rice is cooking, heat butter in a skillet over medium heat. Add chopped green onions and chopped mushrooms.

Once mushrooms have browned, push mushrooms and green onions to the side of the pan.

Add a little more butter to the pan and cook eggs.

Scramble the eggs, adding a tablespoon of soy sauce, until cooked.

Once eggs are cooked, mix mushrooms and green onions with the eggs.

Add the cooked rice to the pan. Add soy sauce and mix until well covered with the soy sauce. If needed, add more soy sauce to your tasting.

Serve with soy sauce on the side. Printable down below.

Delicious and quick fried rice.

Ingredients

  • long grained white rice
  • butter
  • 1 cup mushrooms
  • 2 green onions
  • 2 eggs
  • soy sauce

Directions

Cook rice according to package directions.

While rice is cooking, heat butter in a skillet over medium heat. Chop green onions and mushrooms and add them to the skillet. Cook until mushrooms have browned and push mushrooms and green onions to the side of the skillet.

Add a little more butter to the skillet and cook two eggs. Add a little soy sauce to eggs and scramble. Once eggs are cooked, mix mushrooms and green onions with eggs.

Add the cooked rice to the pan, adding soy sauce and mixing everything together until well mixed. Add more soy sauce to taste. Serve with soy sauce on the side.
