Broccoli-Chicken-Rice Casserole

I’m still on the casserole train. It has been a stressful couple of weeks at work, and also getting ready to move, and casseroles have been my go to dishes lately. They’re easy to make and they give me leftovers that I can take to work for lunch. I love me some leftovers y’all!

This one has more prep, but still so easy to make. It turned out really good! Very cheesy!

The cast:

Preheat oven to 375 degrees.

Cook rice according to package directions. I used regular rice, but you can use Minute Rice if you want to make it quicker.

Cut chicken into cubes and cook until cooked through.

Arrange broccoli on the bottom of a greased 9×13 casserole dish.

Spoon cooked rice over broccoli.

In a bowl, combine soup and mayonnaise.

Stir in enough milk to make a sauce, about 1 soup can.

Add chicken, 1/2 cup cheese, and salt and pepper to taste.

Pour mixture over rice.

Sprinkle remaining cheese on top.

Bake for 35 minutes or until golden brown.

Broccoli-Chicken-Rice Casserole

A cheesy broccoli, chicken, and rice casserole.

Ingredients

  • 2 1/2 cups minute rice, uncooked (or regular long grain rice)
  • 1 large bunch broccoli or 2- 10 oz packages frozen broccoli spears
  • 1 can cream of chicken soup
  • 1 can cheddar cheese soup
  • 1 cup mayonnaise
  • 1 soup can milk
  • 3 cups chicken, cooked and cubed
  • 1 1/2 cups mozzarella
  • salt and pepper to taste

Directions

Preheat oven to 375 degrees.

Cook rice according to package.

Arrange broccoli on bottom of a greased 9×13 casserole dish. Spoon cooked rice over broccoli.

In a bowl, combine soup and mayonnaise. Stir in enough milk to make a sauce, about 1 soup can. Add chicken, 1/2 cup cheese, and salt and pepper to taste. Pour over rice. Sprinkle remaining cheese on top.

Bake for 35 minutes or until golden brown.
