Chicken Cacciatore (in 20 minutes)

I’m officially on vacation for the next two weeks! So I will leave you with this recipe. This is another quick recipe for those nights when you don’t have much time to make something.

Using the quick cook rice is really what makes this recipe so fast, but if you have time to spare you can always cook regular rice and pour the mixture over the rice.

The Cast:

Brown chicken, onion, and garlic in oil.

Add tomatoes, tomato sauce, seasonings, and green pepper if wanted.

Bring everything to a full boil. Stir in the quick cook rice.

Cover and remove the pot from the heat. Let stand for 5 minutes.

Stir before serving.

Chicken Cacciatore (in 20 minutes)

A quick take on chicken cacciatore for those busy nights.

Ingredients

  • 1 lb boneless chicken strips
  • 1/2 cup chopped onion
  • 1 garlic clove, minced
  • 1- 28oz can tomatoes*
  • 1- 8oz can tomato sauce*
  • 1 tsp salt*
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/8 tsp red pepper
  • 1 cup green pepper strips (optional)
  • 1 1/2 cup quick cook rice

*May use 1- 16oz jar spaghetti sauce and 1 1/4 cup water instead

Directions

Brown chicken, onion, and garlic in oil.

Add tomatoes, tomato sauce, seasonings, and green pepper if wanted.

Bring everything to a full boil. Stir in the quick cook rice.

Cover and remove the pot from the heat. Let stand for 5 minutes.

Stir before serving.
