Slow Cooker Cilantro Lime Chicken Tacos

It was so nice having the first two days off this week, but boy has the work week gone on forever (despite the short week). I’m so glad today is finally Friday and the weekend is about to begin!

I hope everyone has some lovely plans this weekend. My plan is to relax, maybe do some shopping, and read.

Let’s start this weekend off with some delicious tacos!

I have been making these chicken tacos for awhile now and they are my favorite. They have so much flavor!

The Cast:

Place chicken in the bottom of the slow cooker.

Sprinkle taco seasoning over the top.

Cover with salsa, lime juice, and cilantro. I love to use a lime salsa, just to give it that extra lime kick. I tried out the salsa verde and have to say it turned out really well.

Place lid on top of the slow cooker and cook for 4 hours on high or 6-7 hours on low. The smells wafting from the kitchen are absolutely heavenly and when you lift the lid to the slow cooker, it’ll make your mouth water!

Remove chicken from the crockpot to a separate bowl and shred with two forks. The chicken is so tender and easy to shred.

Add the juice from the crockpot to the chicken.

Serve with taco shells or tortillas, adding your favorite toppings! I tried out the taco boats for the first time and am a huge fan!

Slow Cooker Cilantro Lime Chicken Tacos

  • Servings: 6-8

There is so much flavor packed in these cilantro lime chicken tacos!

Ingredients

  • 3 skinless, boneless chicken breasts
  • 1 packet taco seasoning mix
  • 1- 16 oz jar salsa*
  • 1/3 cup chopped fresh cilantro
  • juice from 2 small limes

*your favorite salsa, any kind/flavor will work

Directions

Place chicken in the bottom of the slow cooker. Sprinkle taco seasoning over the top, then cover with salsa, lime juice, and cilantro.

Place lid on top and cook for 4 hours on high or 6-7 hours on low.

Remove chicken from crockpot to a separate bowl and shred with two forks. Add the juice from the crockpot to the chicken.

Serve with taco shells or tortillas, adding your favorite toppings to finish it off.
